Eat Smart Recipe - Provencale Rice and Pease

INGREDIENTS

  • ¼ cup chopped onion
  • 4 T olive oil
  • ½ clove garlic, finely chopped
  • ½ cup sliced green olives
  • 2 cups cooked peas
  • 2 cups hot cooked brown rice
  • Pimento strips
  • ¼ cup chopped parsley

DIRECTIONS

  1. Sauté onion in oil until tender, about 10 minutes; add garlic and olives and cook 1 minute longer.
  2. Combine with peas and rice; toss gently.
  3. Garnish with pimento strips and parsley.
