Eat Smart Recipe - Whitefish with Tomatoes

  • 8 Fish Fillets
  • salt
  • pepper
  • 2 tomatoes, chopped and cubed
  • 1 zucchini, chopped and cubed
  • butter


Start by preheating the oven to 450 degrees.
Season fish with salt and pepper and place in a large baking dish with foil.
In a skillet, add butter on medium heat and add in tomatoes and zucchini.
Saute for 5 minutes and season.
Add vegetables over meat.
Place in the oven and cook for 12-15 minutes.
